Where to stay and what to see for elderly people travelling?

Hi, we are going to Lisbon in Sept arriving early evening on saturday and leaving mid evening on the following Wednesday. We are 4 people in total 2 of whom are elderly and one of whom is immobility impaired. I've heard that Lisbon is hilly but can you recommend a place to stay that's on the flat and we can get about using buses, metro and the like? about 4 star Can we visit places like Sintra even though we have restrictions on walking? Also we are vegeterian so no fish or sea food - any recommendations on palces to eat? Otherwise we may have to go self catering which is a shame if we are only there for a short time What's the best way to get from the airport to your hotel - a transfer or a cab or the bus?? We won't have loads of luggage
